    Hell, when I lived in Maryland, we went out every Sunday morning, ran a trot line baited with eels and took our fresh bushel of "A number one Jimmies" Kept them cool, broke out the keg turned into a steamer about 2:00 pm, all that were still alive (99%) went in doused with OLD BAY, dumped on big picnic table, and it was on.

    Boiling. OMG! Can I hear mushy? You guys have great food in LA, but boiled crabs ain't one.
  5. Mushy? You can oversteam them just as easy as overboiling them. Boiling crustaceans properly is not all that hard. Heat is heat.
