1. OK, so I peeled about 20 pounds of leftover crawfish from a boil on Friday night (about 2 pounds of tails). Problem is - after a full day of eating them, and a full night of peeling leftovers (till 1 am), I couldn't bring myself to clean the heads for stuffing. My finger tips are still a bit swollen and sore.:(

But now I REALLY want to make Bisque.

Short of buying some cleaned heads from the seafood store, anyone have ideas for the crawfish stuffing? I don't think it'll hold together meatball-style. So I'm wondering what else would work...

C'mon Coonazzes - one of you surely has an idea.
  2. why not a type of dumpling? ground crawfish, breadcrumbs, egg, a small bit of flour for binding, and seasonings that got cooked in the bisque? off the top of my head, thats the only thing i can come up with.

whatever you come up with, let us know how it turns out.
  3. Make Crawfish Boudin. :)
  4. Or put it in some of those crab shells, same chit. I've seen them in boulettes (sp) though, it can be done.
