The French Quarter is a tourist trap but outside of that there are a lot of real people in the NOLA area.

Can you really tell the difference between made roux & roux in a jar? I prefer roux in a jar or microwave roux because they are both a hell of a lot quicker & more convenient.

Only cajun dish with tomatoes is sauce piquant. Just is. Everything else is creole.
