Good Opossum Recipe?

    Caught a opossum in my yard. My grandma use to cook them, any ideas? Might take it to my next departmental pot-luck.

    Get one of those oven bags and place the possum in it. Then throw that sh!t away.

    Being from south Louisiana I've eaten many "exotic" food in my day, I have to say I could not eat a possum. There is a reason its referred to as " unne Rat De Bois":

    If it is smallish, say under 4 pounds, you can cook it just like a rabbit.

    I like to melt a stick of butter and cut the possum in sixths or eights and cook it in the melted butter with some potatoes and carrots. Sometimes I'll make a little gravy and eat it over rice.

    Another favorite of mine is cut up tiny little peices and brown it, and throw in some bacon and when everything is nice and cooked break in a few eggs. I then serve the big mess over grits. I do this with doves, and squirels too.


    One thing to cosider is possums have musk glands, and if you don't get them off the meat will be terrible. Also be sure to trim as much fat as yo can. Possum fat puts off a lot of grease. A possum with too much fat on it is no good.

    By the looks of Supafan's avatar, I think he tried to eat a 'possum before it was cooked long enough and it began to bite back.:hihi:.

    I was thinking the same thing! Also, from what I know about Supa, I think he's an accountant? Tromping around ponds catching snapping turtles and now eating possums, just makes for a helluva contradiction in personalities!

    You can take the boy out the swamp...

    Interestingly enough my dad, who taught me all this stuff was a university professor. We come from swamp stock and know what is good.
