Guinea in a Gravy

    I went to a Farmers' Market nearby yesterday and bought 4 guineas. Came home, cut their necks with a hatchet and cleaned them. Today I made a fire and cooked 2 of them in a black pot over some coals. Hot dam they were delicious.

    I know most people speak of guinea gumbo when the mention eating them. Anyone else ever eat them in a brown gravy?

    My grandpa used to cook those things all the time and they rocked!! Never knew what they looked like though, now I realize it was the birds running all over his farm.

    They're sometimes called "watchdogs" cause they are LOUD and make noise when there's anything moving in the barnyard.

    They are actually native to Africa and are very hardy and adaptable birds. I saw some apparent feral ones and didn't know what they were. Did a little research and found out about them.

    Yeah they're half wild. I've been told they don't "raise" well as far as setting on eggs. I've also heard if you live around the woods, especially, have a few and they'll eat all the ticks and other insects.

    Before I saw the picture I thought you meant guinea pigs... lol.

    Nah, can't say I've ever eaten that. They do say that coonazzes will eat anything though. :grin:
