1. If everything comes in a 2lb bag how much crawfish do you get?


    Question for Iron Chef Steve: After the water with the crawfish comes back to a rolling boil, how long do yo favor waiting until you shut it off? I'm boiling some for Easter and I thought I would let if boil for 5 minutes and when I shut it off to dump a bag of ice on them. It's supposed to make the crawfish suck up more seasoning and be spicier and juicier when you suck the heads.

  2. That"s a good plan. The ice does that. It shortens the soaking time. Just check a few for texture so they don't over cook. About 20 mins. is the soaking time.

    When the temp of the water is rising, the flavor is going into the water. When the temp drops (ice) the flavor is going from the water into the crawfish.
