1. We just finished the last of the turkey/sausage gumbo made from the Thanksgiving turkey. My son made it and it was wonderful. I had blanched and frozen okra from my summer garden and wanted to put it in the gumbo. He said he didn't make "creole gumbo". My question to all of you is do you like okra and tomatoes in your gumbo? Cajun or Creole?

    I'm in the process of making turkey gumbo now myself. Doing it all from scratch. I started simmering the turkey carcass 2 hours ago to make stock.

  4. I don't like tomatoes or okra in gumbo. Okra is just too slimy in gumbo. The only way I really like okra is battered and fried.

    Definitely okra, it doesn't have to be a lot. If it doesn't have okra, it's not gumbo to me. It's some kind of turkey stew.

  9. Well, It looks like I am headed to the slammer! I am a minority of one who likes okra in gumbo. I guess it could be how you are raised. My Mama put okra in her gumbo, but then, she was transplanted from Tennessee. That explains it. Thanks for replying.
