What's for dinner??

    Made some top loin stir fry. I make it often because it is relatively healthy and a quick recipe especially if I prep ahead of time. I use different cuts of beef depending on the portions and budget.

    Here it is:

    Cut the beef into cubes
    Season the beef to your liking if you want
    Marinate the beef in the fridge for at least an hour with your stir fry sauce. (Kikkoman Stir Fry Sauce is what I like to use if you can find it) I get it at Albertson's in Baton Rouge. I usually prep the night before so it marinates for at least 24 hours.

    Cut up some Onions, Green peppers, and Red Peppers or what ever other veggies you like to use.
    Season and Cook in the pan for about 4 mins ( I usually add a little Stir fry sauce here as well)
    Put the veggies in a bowl
    Use the same pan to cook the meat for another 2-3 mins (I like Medium-rare)
    Add the meat and veggies together in the pan.
    This is when I add Bean Sprouts and Water Chestnuts (Maybe some green onions if I want to go wild):hihi:

    Serve over rice.


    Takes no time at all. Longest part is cutting up the peppers and cooking the rice.

    I cheat and buy pre-chopped stir-fry vegetables at Albertsons. Sometimes they have thin sliced stir-fy beef, too. I like to toss in a few tablespoons of sesame-teriyaki sauce for the last minute of frying.

    I eat it without rice and its a low-calorie, low carb meal.

    I skip the rice as well and even use Brown rice at times. I will try some of that sauce next time.

    Grilled ham and cheese on whole wheat on the way out the door to work...

    4 fried eggs, half a pound of bacon, bunch of toast bread

    tenderized round steak (fried of course), tomatoe gravy (fresh tomatoes from last years garden), and homemade biscuits. CAN'T AFFORD TO EAT OUT like some of you.

    a vegetarian sandwich and a large bowl of strawberries and blueberries. actually, two bowls of berries.

    hopefully that will make up for the two big bowls of tortellini soup i had for lunch. :redface:
