I filleted the 8 biggest ones to make a court boullion for my oldest and I gave every other one away.
Growing up in Texas and then Florida, I had to adapt from crappie to speckled perch. Then I went to LSU and had to ask "What the hell is a sac-a-lait?" Great eatin' fish!
I used to fry it but recently tried it like that. Dad used to cook it like that for himself when I'd bring him a couple of big ones (after I'd moved out). Never tempted me but did it to try since my oldest daughter didn't care for it fried and she loved it.
everyone over here always called em white perch but crappie is becoming more and more common now with all the transplants we have piling in here the past several years.
