Haven't posted anything lately but have been doin ok. Have made 8 trips the past few weeks and with the heat it has been tough but getting fair enough boxes for the conditions. Every trip has been about the same with a mix of a few specs, several whites and ground mullet and a few flounder each time. Average prob something like 5 specs, 50-60 white trout and ground mullet and around 3 or 4 flounder. Nothing spectacular but enough to keep going and it's letting us eat only the fresh fish so keeping the freezer stocked for deer season. Def ready for it to get back right when the temps come down a little bit.

I find the whites to taste about like specs but they get mushy if you don't filet them even before you get home. There have been a few times when the specs weren't biting and the whites were than we caught so many we ran out of bait shrimp. No problem. Cut up a few whites and keep on catching.

I prefer the white trout over the specs by a long ways. And the ground mullet even more than that. Nothing fries up as crispy and tastes as good as those 2. I keep a freezer packed full of them and eat on em all deer season along with the rest of the camp. I've heard lots of people talk about em getting mushy but I've never had it happen and I been fillin ice chests up with em my whole life. Get em cold and keep em cold and have never had that happen. What I have seen people do....and I'm not saying you did this or anything just talking an observation I've made....is take to many out of the ice at a time to clean em. Def can't take 20 out at a time or they will start to warm up and that's when the mush starts. I only take 5 out at a time and they stay as stiff as a board. One other thing I've seen my best friend do and it took me a while to get him to stop doing it is when he cut the bellies off the fillets he was crushing the top half of the fillet with his thumb holding the fillet down. He kept complaining that when I cleaned em they were always crisp and pretty but his kept coming out half mushy. Finally watched him one day and it only took 1 fillet to identify the problem. Now he just holds the belly side to cut it off and has pretty fillets every time

That's probably it. I keep them in the ice chest but when I go to clean them I put them all on the cleaning table at once. Next time I'll just take out a few at a time
