    you can choose catfish, talapia, salmon, flounder, grouper or whatever you like for this dish. take some leftover rice as the "bed" on a sheet of foil. drizzle with some olive oil and salt and pepper. put the fish fillet on the rice and season with salt and pepper and whatever creole seasoning you may like and drizzle some more olive oil. add chopped onion, celery and carrot and salt and pepper. wrap the foil over into a sealed package. oven should be pre-heated (on bake) to 350 degrees. cook fish in foil at 350 degrees for 30 minutes. the juices from the fish will moisten the rice and cook the vegetables. when done, open the foil and slide fish and rice onto a plate. instant dinner. you can also add lemon juice and chopped garlic as well onto the fish as well as hot sauce so it will cook in. very easy and very good and hardly any pots or pans to clean.
