Joe D's Hot sausage poboy

Can anyone remember the sauce they put on the hot sausage poboy at Joe-D's. I'm trying to recreate it, any ideas.

Where? And how would you know about Joe D's? It was a local one store place with a deli in the back. I use to get the hot sausage poboys and baked beans whenever I was near there.
