  4. If you make your own really good roux and make extra, you can freeze it as well. Ice cube trays work well.

  7. My old man had a big jar of frozen roux in the NM ski condo he used to rent out. Label said "Roux - Do not throw away". One Mardi Gras made trip up and discovered it was gone. All I could picture was some naive shmuck putting a spoonful in their mouth and tossing in garbage while yacking.

  8. Cause you know that has to be what happened. My mom used to cool hers (before she went to the jar) and I can still remember running up on a bowl of it thinking it was some sort of pudding. Yack indeed!
