Question for @stevescookin What exactly is an aperitif? One definition says:
    a·pe·ri·tif
    äˌperəˈtif/
    noun
    1. an alcoholic drink taken before a meal to stimulate the appetite.
Would it typically be a wine or a liqueur? Would it be pair with the food?

That is a good definition. It usually is a wine. Vermouth is a typical one.

I really don't think it works chemically because alcohol is a profound gastric irritant. However the flavor part of wines and aperitif does taste good. Also, wine cleanses your palate (taste buds) and gives the effect of "re starting" the taste experience so that the last bite is as exciting as the first.

Usually, when you experience great tasting food, after the first bunch of bites you kind of get used to the taste. A sip of wine kind of gets you restarted...taste wise.

Another thing that enhances flavor is an atmosphere of peace and relaxation. You can't really enjoy the subtleties of flavor when the kids are cutting up at the table in your house...throwing everything in the dang house around. Lol. That's why going to a restaurant is so nice. It's peaceful, special and you don't even think about cleaning up.

There's a big difference between eating and dining. Eating is alleviating hunger. Dining is a great human experience. Aperitifs and wine really enhance it.

I used to really enjoy a nice brandy afterwards too. The dining experience and taste party doesn't end when you finish eating...especially when you're with a beautiful woman.
