    Most people think a rib eye is a rib eye. I'm no expert but did work in the meat market at a delchamps for a time during college.
    First of all, any corner store butcher shop can stamp any one of the following: Prime, Choice, and Select.

    Without the "USDA" tag, they could be serving up anything and it's all legal.

    Look for the USDA sticker. About half of all beef is marked USDA Choice. Even then, there are actually three numbered sublevels of USDA Choice.

    I look for the off-color ones that are "Reduced for quick sale. They're aged and usually tender.

    Especially on those, if I need to carry a hazard I'm not about to get out there with some rock like a pinnacle or one of those reworked top-flites that they sell for $20 for 50 balls at wally world.
