    What it didn't say in the wiki link was that the guys on horseback gather up donated chickens, pigs and other foods and make gumbo and jambalaya from them. Also have a conchon du lait which is roasting a pig in a pit dug into the ground.

    After the conchon du lait, there is usually followed by a rousing game of Rochambeau. Remember to always go first!!!
