actually the vinegar you speak of kills the bacteria in mayo so it will be safe as well. little known fact. as long as the eggs are pasteurized.

A jar of Hellmans is pasteurized, but traditional homemade mayonnaise is not. They make it daily where they have no refrigeration because it goes bad. The oils in it go rancid pretty fast, too.
I find that unrefidgerated mayonnaise tastes better than cold. I buy Hellman's or Blue Plate in smaller than the largest jars and it stays good until I use it up.
Just like chocolate or cheese taste better at room temperature. And I hate cold ketchup. I have never kept ketchup in the fridge in my life. I hate dipping a hot french fry into cold ketchup
Cheese maybe but not if it sits out too long....then the texture is creepy. I love me a frozen Snicker's or 3 Musketeers bar.
