I see you just beheaded and scaled them. Do you fillet them too? Sac-au-lait is the one fish I like better fried like that instead of filleted.
Scaled them first, actually. Then I filleted 10 to make a court boullion with for my oldest daughter who loves that. My younger one used to like them fried but no longer does so we pan fry some 10-12 shrimp (or like ma mere used to say, "shrimps"). Cooking that tomorrow. Last time she came in (two weeks ago) I cooked her some turtle. I pick on her and tell her she's so country. She thinks she's not. It's a joke tween us. I gave most of them away but do clean them before giving. I always scale the ones I'm filleting. I like the flavor the skin adds so filleting is not to take a short cut, with me.

Sucked last night. Well for me. Some guy had set where I usually do. We only got 8. I brought a 12 yr old kid who doesn't have a dad in the picture and had never been. He had fun. He thought 8 was pretty good.
