I have a Treo, so I don't actually bother with converting mp3's. I just find them online, play them on my pc, and record them on the phone. The quality stays high if you have decent speakers and a decent phone. I am sure several other phones allow you to record sounds as well, not just the Treo. Otherwise you can do the conversions that other people listed here.
